ROTHWELL RECIPES
Southwest Soup:
a hearty, healthy soup that will warm you up on a cool autumn day!
INGREDIENTS:
1 Medium Red Onion, diced
1/2 Bell Pepper, diced
2 tsp. Garlic, diced
2 Tbsp. Grapeseed Oil
2 Tbsp. Cumin
2 Tbsp. Chili Powder
1/2 tsp. Cayenne Pepper
32 oz. Chicken Broth
30 oz. Black Beans, rinsed (or soak dried beans)
10 C. Kale, washed, de-stemmed, ripped into pieces
1/3 C. Cilantro, chopped
Zest of 1 Lime
Juice of 1 Limes
1 Avocado, sliced
DIRECTIONS:
1. Dice Onions and Pepper into small pieces. Saute in large pot over Medium heat, with Grapeseed Oil, until soft.
2. Add Garlic, Cumin, Cayenne Pepper, Chili Powder to pot and cook until aromas are released from seasonings, about 3 minutes.
3. Add Chicken Broth and Black Beans and bring to a boil. Then, reduce heat and let simmer for 20 minutes.
4. Add Kale, Cilantro, Lime Zest and Lime Juice and simmer for 5 minutes.
5. Remove from heat. Top with sliced Avocado, serve, and enjoy!
